Classic Nicoise Salad Recipe

Nicoise salad is a French salad that originated in the city of Nice. It is traditionally made of tomatoes, hard-boiled eggs, Niçoise olives, and anchovies or tuna, dressed with olive oil. Other ingredients include artichoke hearts, cucumber, fava beans, radishes, and bell peppers. The salad is typically served on a bed of lettuce and drizzled with vinaigrette.

Here is a recipe for Classic Nicoise Salad:

Ingredients

  • 5 ounces Red Baby Bibb Lettuce
  • 8 hard-boiled Eggs
  • 1 ½ pounds Baby Red Potatoes
  • 1 pound Fresh Green Beans
  • 1 Small Shallot (2 tablespoons minced)
  • 2 tablespoons White Wine Vinegar
  • 2 tablespoons Capers (drained)
  • ½ tablespoon Fresh Parsley (optional)
  • ½ cup Kalamata Olives
  • 1 pint Cherry Tomatoes (or 1 large tomato)
  • 2 cans Tuna (omit for vegetarian)
  • Lemon Vinaigrette
  • Olive Oil
  • Kosher Salt
  • Fresh Ground Pepper

Instructions

  1. Boil the potatoes: Wash the potatoes and slice them in half. Place them in a pot with enough water to cover them by an inch. Bring to a boil and cook until tender, about 10 minutes.
  2. Boil the eggs: Place the eggs in a pot and cover with water. Bring to a boil and cook for 7 minutes. Drain and place in an ice bath.
  3. Cook the green beans: Trim the ends off of the green beans. Bring a pot of salted water to a boil and cook until tender, about 5 minutes.
  4. Make the vinaigrette: In a small bowl, whisk together the white wine vinegar, minced shallot, capers, parsley (if using), salt, and pepper. Slowly whisk in the olive oil until emulsified.
  5. Assemble the salad: Arrange the lettuce on a platter or in bowls. Top with cooked potatoes, green beans, cherry tomatoes, olives, and tuna (if using). Peel and halve the eggs and add them to the salad. Drizzle with vinaigrette.
