1 carrot (sliced)

  1. Preheat the oven to 375F.
  2. Next, heat 2 tablespoons of olive oil over medium-high heat in a large nonstick pan.
  3. Then, add the onion, garlic, and carrot and cook until tender, about 5 minutes.
  4. Next, add the crushed tomatoes and seasonings and simmer for 15 minutes.
  5. Layer the sliced vegetables in a baking dish.
  6. Pour the tomato mixture over the vegetables, then top with the cheese.
  7. Cover with foil and bake for 45 minutes.
  8. Remove foil and bake for an additional 15 minutes.
