The Origin Of Fried Rice 

The earliest record of fried rice is found in the Sui dynasty (589–618 CE) in China. Though the stir-frying technique used for fried rice was recorded much earlier, it was only in the late Ming dynasty (1368–1644 CE) that the method became widely popular.

Here is an easy fried rice recipe: 

Ingredients

  • 4 cups loosened leftover cooked rice
  • ½ can Spam (6 ounces), diced very small
  • 3 eggs, beaten
  • 1 carrot, peeled and chopped
  • 2 to 3 scallions, thinly sliced
  • Salt
  • White pepper

Instructions

  1. Heat a large non-stick skillet over medium-high heat. Coat pan with oil, about 2 tablespoons.
  2. Add Spam and fry, stirring until crispy and browned on all sides.
  3. Add chopped carrot and stir-fry until slightly softened, about 2 minutes.
  4. Add rice and break up clumps with a wooden spatula, mixing well until the rice is softened and heated.
  5. Push the rice mixture to one side of the skillet. Next, Pour beaten eggs into the other side of the skillet and cook until set.
  6. Mix the eggs into the rice mixture.
  7. Add scallions and stir-fry for another minute or two.
  8. Lastly, Season with salt and white pepper to taste.

Can I Use Fresh Rice? 

Yes, you can use fresh rice for fried rice. Many cooks believe that using fresh rice produces a more flavorful and succulent dish. However, cooled fresh rice or day-old rice are your best bet for fried rice. Also, you want the moisture to have evaporated from the rice—that way, the grains will crisp up without getting mushy or breaking apart.

The nutritional value of fried rice varies depending on the ingredients used. One cup (166 grams) of vegetarian fried rice contains approximately 289 calories, 6 grams of protein, 54 grams of carbohydrates, and 5 grams of fat1. However, the calorie count can vary depending on the type of meat or vegetables used in the dish.
